While Alice was out having dinner with the girls, I was home alone with Chef, our dog. Usually, when I get to eat alone, I would get my seven piece wings dinner from none other than Harold's Fried Chicken Shack. But with the snow outside, I decided to eat whatever was in the fridge. The only thing that was defrosted was a pack of chicken breasts. So I decided to do a simple roasted chicken breast. The trick to getting juicy chicken is to first brine the chicken in a salt solution (about 3 teaspoons of salt to 1 quart of cold water), then to dry the skin prior to roasting. I paired the chicken breast with a beurre blanc sauce and a side salad with a sesame dressing. It was no Harold's but this came really close.
