Preview: Spherification, DEN->LAX->SMF / by Alice Zhao

Tomorrow, Jared and I are embarking on our week-long vacation that involves 3 cities! Our first stop will be Denver where we will be attending a wedding between two of my dearest friends. We have about a day to ourselves. We'll probably end up spending it downtown, walking around and taking pictures. Monday, we head out to Los Angeles to visit Jared's parents and meet up with some friends. That will be a 4 day cheap-eats-fest - I cannot wait! And finally, we'll be flying out to Sacramento to visit Jared's sister. And more importantly (not that his sister is not important) we'll be heading to Yountville to dine at the French Laundry!!!!! This is part of Jared's belated 30th birthday gift- so he better appreciate it. This trip will cost us both a very pretty penny, but I think it'll be very much worth it. Life is short. Gotta live it!

And, what's possibly even more exciting than all of this is that Jared rented a Canon 85mm/F1.2L lens. Normally this lens costs $1,700 by itself. I did not have the heart to make this purchase (maybe if we figure out how to make a fat living off photography), so renting was a reasonable compromise. We received it on Tuesday and we're already in love. Anyway, we leave you with a preview of things to come after we come back from our trip. See you on the other side!

Jared finally got the formula right for these Milk Tea Spheres. There are some really great recipes here and here and step-by-step videos out there already. I would suggest having some basic knowledge of pH balance and chemical reactions. It helps when you start experimenting with different flavors. You may find that you want to alternate between using an alginate bath or a calcium bath depending on the flavor you're testing out. These pictures are pretty amazing with the new lens. Anybody have a spare $1,700 they'd like to give us?

Jared's Milk Tea Spheres Formula

Mix 500 ml of water to 5 grams of calcium chloride
Mix 200 ml of milk tea to 1 gram of sodium alginate
Kirin Kogo no kocha (Afternoon Milk Tea)
