After our visit to Bistro Jeanty, we were sticker shocked at how much they charged for such a simple dish. Restaurants charge $7.95 and some places a lot more (probably double at Bistro Jeanty) for a roasted bone marrow dish. But the thing is, it couldn't have cost them more than $1.00 to make! Jared was inspired to recreate this dish when we get back to Chicago. This past Sunday, Jared picked up all these bones with the marrow at our local meat store for less than a buck. (The key is also to finding a really good cheap meat store). He seasoned it with salt and pepper, roasted it at 450°F for 20 minutes in a cast iron pan, topped it with parsley and drizzled balsamic vinegar. He also toasted some bread and that's was it! You'll never have to spend that $7.95+ ever again for something so incredibly easy and delicious!
NOTE: Let the bones sit at room temp for 30 minutes before putting in the oven. Some of the fat will render out during cooking. Save the fat and use it for sauteing later.
